Culinary spheres developed and produced in France
Our culinary spheres are developed in France at our production unit in Guidel, Brittany. We attach particular importance to our ingredients, prioritising local sourcing whenever possible.
- Brittany Seaweed: Our alginate is produced from seaweed harvested in Brittany.
- Clean Label: Manufactured without artificial colours or flavours, and completely free of animal gelatin.
- Eco-friendly: Packaged in glass jars for better recyclability and preservation.
Molecular gastronomy on your plate
At Phileas Gourmet, we turn citrus juice, soy sauce, or syrups into spheres of bursting flavour. This is achieved through reverse spherification: an encapsulation technique resulting from the reaction between alginate (seaweed extract) and calcium. It’s not magic—it’s culinary science, mastered right here in Brittany.
